To rip from a DVD, use HandBrake.
To rip from LaserDisc, you'll need some kind of A to D encoding hardware, like an EyeTV: USA, Europe.

The above rippers produce QuickTime compatible MPEG files, which you can simply import into kJams with "File->Add To Library…"

To rip from a SuperCDG or a NEO+G just stick it in, select the songs you want and go file->rip or just drag them to the Library.
To rip from VCD: First you must manually enter meta data for all the tracks you want to rip. Then, select the tracks you want and drag them to the Library icon.
